Chaigoubu Smoked Meat

Tradition has it that a chef named Guo Xi opened a butcher’s shop in Chaigoubu Ancient Town during the Qing Dynasty. The smoked meat made by him was tender, bright and fragrant, fat but not greasy, and the lean meat won’t get stuck between the teeth. The nutritious meat not only has special flavor, but also can stimulate your appetite, dispel coldness and help with digestion.

In summer, flies and mosquitoes won’t be attracted to the meat and it can be stored for one week before turning back because it is smoked by dead wood. According toHuaian County Annals, Chaigoubu smoked meat is famous all over the province and it is praised by all relatives and friends. Another story goes like this: when Empress Dowager Cixi and Emperor Guangxu escaped from the invasion of the Eight-Power Allied Forces, they passed by Chaigoubu and tried the smoked meat, thus spoke highly of it and made it one of the articles of tribute.

Different kinds of smoked pork include streaky meat, pig head, pig feet, rib and so on.
