The brand Jinfeng Braised Chicken came from 1908 when a Hui ethnic couple named Ma opened a Ma’s chicken shop in Daqiao Street in Shijiazhuang and their braised chicken has unique flavor. The shop might be small, but is was crowded with buyers every day.
The shop has inherited China’s traditional way of making braised chicken by using 18 kinds of ingredients which are both spices and herbal medicines and their names can be found in Compendium of Materia Medica.The hundred-year-old recipe remains almost unchanged, and every day they’ll renew the soup by discarding the floating oil and dregs and adding new seasonings.
On one hand, the managers of Jinfeng Braised Chicken inherited the tradition of the time-honored brand; on the other hand, they improved the processing technique by adopting stainless steel jacketed pan instead of iron pot, using steam heating system and introduced dozens of new products like roast chicken, spring chicken, and roast duck. The vacuum package also extended the shell life from three days at most to 90 to 180 days.
